The signature New Mexican spice rubbed pork tenderloin @ Mesa Grill in Caesars Las Vegas
As the Mesa Grill nears its 10th anniversary on the Strip, it continues to experience lasting popularity with guests (unlike some other celebrity outposts in Vegas which flame out after a short period of time). Some of this is likely the result of chef Bobby Flay’s own popularity from his many shows on TV; one could argue he is probably one of the more talented chefs on the Food Network (though that perhaps is not that great of a distinction these days).
As for the food, the pork tenderloin dish came well-hyped by reviewers online as well as from the server. The pork was cooked nicely and the ancho chile sauce provided a surprising, almost overwhelming, kick (the use of chile was a bit more subtle on the very good grilled lamb chop dish served there).
However, the most memorable part of this dish…probably their ability to elevate a very inexpensive cut of meat into a $36 entree.
